Baingan(Eggplant) Bartha

Ingredients

    Baingan(Eggplant/Brinjal)-4 no big
  • Onion-1 1/2 Cup chopped
  • Tomato- 3 no’s chopped
  • Garlic-1 pod
  • Garam masala-1/4th tsp
  • Ginger-1/4th tsp
  • Coriander powder-1/2 tsp
  • Jeera powder-1/4th tsp
  • Heeng
  • Salt
  • Oil-4tsp

Procedure
  1. Apply oil to a brinjal and place it on the stove, directly
  2. Keep rotating it on all sides so that it cook evenly-
  3. Repeat the 1 and 2 steps for all the brinjals and allow them to cool
  4. Then peal off the black skin
  5. Smash them well
  6. Take a pan and heat it
  7. Add the oil and heeng
  8. Add the chopped onions and stir fry till cooked (add garlic if u like)
  9. Add chopped tomatoes, let it cook until the oil floats on top
  10. Add the coriander powder, jeera powder,chili powder
  11. Add the smashed brinjal and ginger
  12. And cook for 10-12 minutes

Garnish it with lots of fresh green chili and coriander leafs , serve hot with rice or roti
